Potato is the first best favourite veggie for all age groups. It is also the staple vegetable and is available in all parts of the world and year round. Potatoes can be easily added into any dish to enhance the taste and they form the base for most of the dishes. They are also one of the first few vegetables that we introduce to our babies and kids. Potato are cooked and enjoyed in many different ways. Here is a quick and easy potato stirfry which goes great with any dish!

Preparation time- 10 mins

Cooking time- 10 mins

Serves – 3

Potato – 2 large
Oil – 2 tbsp
Chilli powder -1/2 tsp

Wash the potatoes and peel the skin. Cut them into bite size pieces and steam cook them in a rice cooker until they are soft by sprinkling some salt.

Now heat oil in a non stick pan, once the oil is hot, add in the potato pieces and saute for about a minute and toss them. Now add salt and allow it to cook for another 2 to 3 minutes by tossing them. 

Add the Chilli powder and cook them for another 2 minutes until they turn golden brown on all sides. 

The oil comes out on the sides of the vegetable, now switch off the flame and transfer the potato to a bowl. 

They can be had with most of the rice dishes and also as a side dish.
