Cupcakes… that’s easy to make and not messy. Let’s make a basic vanilla cupcake, it has been quite some time I had baked a cake so thought will do this simple yet yummy cupcakes. Kids love the look of cupcakes and they join you to make them! It is great to see their hands at work on making them! Credits to ‘Latha’s  kitchen studio, were I learnt to bake some wonderful cakes! Gave me lots of knowledge and confidence to bake cakes!

Preparation time – 15 mins

Cooking time – 15 mins

Serves -12

Flour/ maida – 2 cups
Egg – 3 eggs 
Butter – 1/2 cup
Sugar – 2/3 cup
Salt – 1 gram
Baking powder – 1 1/2 tsp
Vanilla – 1 tsp
Milk – 60 ml

For the butter cream frosting
Butter – 200 grams
Coco powder – 2 tbsp
Cream – 2 tbsp
Coffee – 1 tsp
Icing sugar  – 120 grams

– Preheat the oven to 180 degree centigrade
– The butter should be soft before using them.

In a bowl beat the sugar and butter until the sugar gets well mixed with the butter and becomes light. Now beat the egg and vanilla and mix it to the bowl of sugar and butter. Beat all the ingredients well until they are fluffy.

In another bowl mix all the dry ingredients and sift them 2 to 3 times.

Finally fold in the milk and dry ingredients alternately into the beaten mix to make the cake batter.

Pour the contents into paper cups in the cupcake tray. They should be filled for 3/4 of the cup to let the cakes raise as they bake!

Bake them at 180 degree for 15 to 16 mins until they are done!

For the butter cream frosting
Take the butter at room temperature add in all the above ingredients and mix well. Fill them in the piping bags with the nozzle of ur choice and Top them with desired designs once the cakes are cooled to room temperature!

Yummy vanilla cupcakes with Choco – coffee buttercream frosting is ready!
