Biriyani is a Sunday special in most of the houses in south India. On Sunday all the members in the family are home or we gather at our relatives place and enjoy this delicious recipe. Biriyani is another one pot rice which is quick and easy to make with lot of flavours and ingredients to make the dish a hit or special in most of the home!

Serves – 3

Basmati rice – 1 cup
Shallots – 10
Tomatoes – 1 large
Mint leaves – 10 leaves
Coriander leaves – handful
Ginger garlic paste – 2 tbsp
Green Chili – 2
Coconut milk – 1/2 cup
Biriyani masala – 2 tsp

Bay leaf – 1
Cinnamon – 1 inch 
Cloves – 4
Cardamom – 3
Fennel seeds – 1/2 tsp
Star anise – 2


Marinate the mutton with salt, turmeric and chili powder for about 30 mins and cook them in a pressure cooker for 6 to 7 whistles.

Grind the shallots to a paste, prepare the fresh ginger garlic paste. Make a puree of the tomatoes and also grind the roughly chopped mint and coriander leaves. Now take the coconut milk and keep aside.

Heat oil in the pressure cooker and add in the bay leaves, cloves, cinnamon and cardamom along with the fennel seeds. Saute them until nice aroma comes out. Now add in the green chili, ginger garlic paste and saute for 2 mins, add in the shallot paste and saute them for about 2 mins until the raw smell gets off the onion. Mix them well and saute until the oil comes out, now add mint leaves and coriander leaves. Give it a good stir and then add the tomatoe puree, saute for 2 to 3 mins.

Now add the rice and mix all the ingredients well. To this add the biriyani masala, and the cooked mutton pieces along with the water in which it is cooked.

Add 1/2 cup coconut milk and another one cup of water and mix well. Finally add salt and give it a good stir. Allow it to cook till the first whistle and then keep in simmer for 5 mins and switch off the flame. Delicious mutton biriyani with tender pieces of mutton is ready to serve. Can be enjoyed with onion raita.
