Avial is my favourite dish for lunch. There had been days when the food all I need from hotel is some avial and rice! It’s yum yum with so many vegetables in it. It’s surely the most nutritious dish for rice.

Preparation time – 10 mins

Cooking time – 15 mins

Serves – 4

Carrot – 1
Beans – 5
Raw banana – 1
Drumstick – 1
Cluster beans -7
Coconut oil – 1 tbsp

To grind
Coconut – 1 cup
Jeera – 1 tbsp
Greens Chilli – 2


Chop all the vegetables and cook them in a pressure cooker for 2 whistles with some water and salt to taste. 

Grind the coconut,jeera and green Chilli by adding some water in a mixer.

Now add the contents from the mixer into the vegetables and mix well and allow it to cook for about 2 to 3 mins.

Take the thick yogurt in a bowl and give it a good stir, add  two table spoon of water and dilute the yogurt.

Once the vegetables are to the room temperature, mix the yogurt with the vegetables , finally add a tablespoon of coconut oil and mix well. Yummy avial is ready to be had, can enjoy this delicious dish with papad and some pickles.
