Ragi or finger millet is rich in nutrition. Ragi is one of the weaning foods given to babies for their high calcium and protein. The protein in ragi prevents malnutrition and calcium is important for good bone density in growing children. Ragi is gluten free and is easily digestible. Ragi malt or ragi kanji is a very common breakfast drink in many South Indian household. However they were used by our previous generation a lot more than we had them.

Ingredients
Whole grain Ragi  – 1 cup
Powered Palm candy –  4 tbsp
Ghee – 3 tsp

 
Method

Soak the ragi for 2 to 3 hours. Wash in several changes of water until water runs clear. Drain of the water add one cup of fresh water and grind it in a mixer.

Filter the milk from the Ragi into a bowl. To the residue add One more cup of water and filter the Ragi milk. Transfer the Ragi milk into a sauce pan after another filter just to make sure no residue is left.

Keep the flame Low and keep stirring continuously and cook for 3 mins. The milk begins to thicken slowly, at this stage add ghee and stir well.

Cook in a Low flame for another 2 mins, the Colour changes and begins to boil. Now add the powdered Palm candy and mix well. Pour into individual small serving bowls and allow it to set.

Enjoy this smooth, soft and delicious healthy pudding made with finger millet (Ragi). It could be one of the most nutritious jelly for kids. Sprinkle some brown sugar and fried cashews while serving.
