Ennai kathirikai kolambu, as the name says has pretty much oil in it than any other Kolambu. It is one of the most favourite and mouth watering kolambu recipe. The brinjals for this kolambu should be small.

Buy healthy looking, firm, shiny, bright-colored brinjals that feel heavy and solid. The stalk should be stout, firm, and green; then the brinjal is fresh. Always avoid over-mature, shrunk eggplants as they will taste bitter.

Brinjal is a low calorie high, fiber vegetable. It is a good source of minerals like manganese, copper, iron and potassium. It contains essential B-complex vitamins. It is effective to reduce high blood cholesterol and fights against various diseases.

Ingredients(Serves – 3)
Brinjal – 10 (the dark blue / purple) variety

For dry masala
Jeera –  2 tsp
Fennel seeds- 1 tsp
Coriander seeds- 4 tsp
Dry Chilli – 3
Pepper – 1 tsp

For the wet masala
Shallots – 20
Ginger – 1 inch
Garlic – 8 cloves
Tomatoes – 1

Other ingredients
Tamarind – lemon size
Salt
Method

Soak the tamarind in warm water to extract the juice for the kolambu. Slit the brinjals into four from bottom up until the middle and keep them in water so that they don’t change in colour until they are taken to fry.

In a pan dry roast the dry masala ingredients until nice aroma comes and they are roasted. Set that aside and allow it to cool. In the same pan take some sesame oil and saute the onions, ginger, garlic and the tomatoes. Saute until the tomatoes becomes slightly mushy, allow this to cool as well.

Meanwhile in a cooker take some sesame oil and fry the brinjals until they are slightly brown for about 3 to 4 mins. Once they are done take and keep it aside.

Grind the dry masala into fine powder once they are cooled and then add the ingredients for wet masala and grind them to fine paste.

Now add the mustard seeds in the cooker, allow it to splutter and then add the masala paste. To this add the filtered tamarind extract. Stir in well and add the brinjals, finally add salt to taste.

Cook for 2 whistles for the brinjal to cook. Delicious ennai kathirikai kolambu is ready to be served with steamed rice.
