Cashew nuts or kaju has amazing health benefits. Cashews are used while preparing both sweet and savoury. They are used in gravies to add volume and enhance the taste. Cashews are required for growth and development of growing children. I make this gravy when I do not want to have the usual chutney, sambar or kurma as this is easy to make.

Onion – 1
Tomato – 1
Chilli powder – 1/4 tsp
Cashews – 5
Coconut – 7 to 8 thin slices
Fennel seeds – 1/8 tsp
Jeera – 1/8 tsp
Coriander – few leaves 


In a mixer take cashews, coconut, fennel seeds, jeera, coriander and add enough water and grind it well to get a milk like consistency. Filter the extract and keep aside.

Heat oil in pan, saute the onion till they turn transparent. Add the tomatoes with a pinch of salt, saute until the tomato becomes soft and the onion and tomato comes together. Now add the Chilli powder and mix well. To this add the extract and allow it to come to a boil. Keep stirring for a minute in low flame.

This yummy gravy can be enjoyed with idly, dosa or chapati.
