Egg is a good source of protein for growing children. Egg yolk contains cholesterol which is essential for brain development. Egg white do not contain carbohydrate or sugar. Egg is rich in iron and omega–3. It is an inexpensive health food which can be included in daily diet instead of meat. Eggs can be had in many different forms as a scramble or hard boiled according to the likes of an individual. This recipe is a quick and easy way to have them with rice and takes not more than 5 mins to get to the plate.

Steamed rice – 1 cup
Egg- 1
Chicken kolambu masala – 1 tsp
Ghee – 1 tsp


Heat oil in a pan, add the egg and scramble. When they are done add in the chicken kolambu masala. Now add 2 tsp of water and cook for a minute . Adding water will allow the masala to mix well without the egg sticking to the bottom of the pan. Add in the steamed rice and mix well. Add salt to taste and finally some ghee to give nice aroma and flavour.

A variation could be to add some sambar or kolambu instead of the chicken kolambu masala.
