Beans is a rich source of dietary fibre and plant protein. Green beans contains health promoting phytonutrients, vitamins and minerals. Beans though green in Colour due to their chlorophyll content , contain comparable amounts of carotenoids like that of carrots and tomatoes.

Beans – 250 grams
Split urad dal – 1 tsp
Mustard seed – 1/4 tsp
Pepper – 1/8 tsp
Chilli powder – 1/4 tsp

Wash the beans throughly and chop them into small thin pieces. Heat oil in pan, add the mustard seeds, once they splutter add in split urad dal and fry until they are golden brown.

Now add the beans and sauté for 3 mins. Sprinkle water and allow it to cook for another 2mins. Toss the vegetable from time to time until they are evenly cooked. Sprinkle some more water if required and give it a toss.

Once the vegetable is soft add salt and Chilli powder. Allow it to cook for another 2 mins and finally add the pepper.

Beans poriyal / beans stir fry is ready to serve. Beans poriyal can be had with steamed rice, sambar.
