Lady’s finger/ okra / vendakkai is a high Fiber vegetable and has many health benefits.
Selecting them is very important as they should be small and tender. Before cooking the lady’s finger throughly wash them in batches and pat them dry completely with a kitchen towel. Cut them into very thin slices and fry in a pan according to the quantity of the vegetable so that they don’t stick to each other, rather give enough room for them to cook.
Lady’s finger – 16
Garlic – 5 cloves
Oil – 3 tsp
Thinly slice the lady’s finger, heat oil in pan and add in the chopped garlic, saute for a while until garlic is slightly fried. Now add the lady’s finger and spread them in the pan evenly so that it does not stick to each other and they get an even coating of the oil.
Keep the flame in medium and allow it to cook by tossing it once in a while.
Allow it to cook for 5 mins when the vegetable is reduced in quantity add salt to taste and give it a toss. Cook for another 3 mins and then add the Chilli powder mix them well by tossing the veggie.
Finally add the pepper when the veggie is almost done.
This veggie is the second best Favourite of kids next to potatoes!
