On any special occasion or festival if we are planning for a special lunch spread, Ghee rice is a yummy healthy vegetarian recipe. This is a kids favourite as there is ghee, cashews, coconut milk and peas. This can be had with vegetable kurma, potato fry, Gobi munchurian

Ingredients
Rice – 1 cup
Peas- 1/4 cup
Green Chilli – 2
Small onion – 10
Ginger – 1 inch
Garlic –5 cloves
Coconut milk – 3 cups (water – 1 cup)
Star anise – 2
Bay leaf – 1
Salt

 
Method

Make a paste of small onion, green chillies, ginger garlic and keep them separately in a bowl or a large plate. Also powder the spices (cinnamon, clove and cardamom). Take 3 cups of coconut milk from half a grated coconut.

Heat some oil and ghee in pressure cooker, add the Bay leaf and star anise now. Add in the powered spices. Once the nice aroma comes out, add in the onion paste and sauté till the raw flavour goes off from the onion. Add in the ginger garlic paste and sauté for another 2 to 3 minutes, now goes the green Chilli paste, some peas and give it a good stir to mix all the masala.

Add the rice, pour in the required quantity of coconut milk and water. Add salt to taste and let it cook.

Yummy ghee rice is ready, the final touch and flavour will be the cashews fried in ghee.
